This is the best analysis of how metabolism works that I have found. It is well written, entertaining, and often quite funny. It is not trying to sell anything, but sets out the results of detailed and extensive scientific research. It debunks some of the unfounded claims of those at the dubious end of the nutrition community and shines a light on the big food industry. Highly recommended.
