ALESSANDRA SPISNI è una bolognese DOC che da oltre 15 anni si aggiudica il titolo di “Mattarello d’oro” come migliore sfoglina d’Italia e che da 30 condivide la sua arte con chi vuole impararla. Dopo aver lavorato presso vari ristoranti, nel 2000 ha aperto la “Vecchia Scuola Bolognese”, la prima e unica scuola che insegna l’arte della sfoglia ad allievi provenienti da tutto il mondo. Dal 2007 è una delle maestre di cucina della Prova del Cuoco (Rai Uno).
