This book begins with an introduction to the author and how she became interested in tacos when she moved to the USA from Spain. She had never had one before and her introduction to tacos not the best BUT that all changed soon after. After the introduction: *Essentials: guacamole & salsas, sauces, tortillas (including pancakes and grain free tortillas), and seasonings *Tacos, Tacos, Tacos: Breakfast, vegetarian, chicken, beef, pork and del mar *Mas Refreshing Beverages *Weekly Plan for the year *Index The photographs are gorgeous. The recipes are easy to follow with easily found ingredients. How to make tortillas is included along with recipes for seasonings and everything else. The tortilla seems to be a base for the filling but in the photos there is so much filling that it seems more of a tostada than an easy to pick up taco with the tortilla more of a base than anything else. That said…boy did those fillings look tasty! There are recipes that are perhaps fusion as recipes included inspiration from Korea, Thailand, America, Greece, Asia and popular tastes such as philly cheesesteak and buffalo chicken.
