I was diagnosed with celiac about ten years ago and have been gluten free ever since. This book reads more like an extremist POV than anything else. Things are OK in moderation and the author basically fears certain ingredients like the plague. Go gf if you need to, like I did, but don't do it just because it's trendy or cool. Again, like most things in life, moderation is key. In regards to the recipes in this book, they are often hampered drastically by the authors fear of certain gf ingredients.

If you do not have a wheat allergy or are not afflicted with Celiac Disease then you should NOT remove wheat from your diet. Despite what this book says, removing wheat will not treat, prevent, or cure any diseases with the exception of helping to treat Celiac. Do not jump on this bandwagon: I ate wheat-free for over a year and it was a needless struggle for everyone involved. Check your facts and talk to your doctor before starting a new diet.

Eating gluten free, unless due to disease, is stupid and nothing more than a fad diet. If you want to loose weight, put down the chicken pasta describe by this book and pick up some wheaties. Calories in vs calories out people, seriously. Anyone who tells you otherwise is spitting in the face of the scientific FACT that is thermodynamics. If you want to lose weight, do yourself a favor and stop doing fad diets like this. Eat better, count calories, and exercise to loose weight. It really is that simple.
