About this audiobook

Gluten. Salt. Sugar. Fat. These are the villains of the American diet-or so a host of doctors and nutritionists would have you believe. But the science is far from settled, and we are racing to eliminate wheat and corn syrup from our diets because we've been lied to. The truth is that almost all of us can put the buns back on our burgers and be just fine. Remember when butter was the enemy? Now it's good for you. You may have lived through times when the Atkins Diet was good, then bad, and then good again; you may have wondered why all your friends cut down on salt or went Paleo; and you might even be thinking about cutting out wheat products from your own diet. In this groundbreaking work, Alan Levinovitz, PhD, exposes the myths behind how we come to believe which foods are good and which are bad and points the way to a truly healthful life, free from anxiety about what we eat.

Don’t believe the lies here. Grain causes systemic inflammation no matter who you are. You don’t need to be allergic or autoimmune to get inflammation. Don’t believe me? Eat wheat and run a C Reactive Protein blood test. Go grain free for three months and run a CRP again. The closer you are to zero the better. I’m grain free and my CRP is zero! Hunter gathers did not have arthritis, agrarian people have arthritis. If you would like to have a body that is inflamed in middle age and later life, eat wheat and other grain. Old people are literally on fire with inflammation and doctors say it’s normal, it’s not. This is the result of eating grain. Paleo and Keto diets work the best. Eat only grass fed meat and organic food. Grain is a cheap way to fill hungry bellies. Even worse the grain in the US is killed off using Round Up to make it easier to harvest. RoundUp was not designed for humans to eat, it’s a weed killer and It causes a long list of potential health problems. Autoimmune disease is an epidemic and wheat is at the root of a lot of it. I can’t tell you how many middle aged people I know who had the beginnings of arthritis in their fingers and once I got them off wheat it went away! Wheat bread also routinely has bromide in it which displaces the iodine off the receptors in women’s iodine receptors in their breasts and thyroid glands. Once this was added to bread instead of iodine, Breast cancer rates skyrocketed. Researchers called it a genocide against women. Iodine, bromide, chlorine and fluoride are all halides. Iodine is necessary for our health the other compete with iodine and bump it off the iodine receptors. Iodine is lacking in our soil so we are all mostly iodine deficient. There is no money in healthy people. We get the worst wheat and high fructose corn syrup, which has been banned everywhere except the United States. High fructose corn syrup is a public health threat and needs to be banned immediately. It is obvious our health is not in the corporations or doctors best interests.

For many years I, nor my doctors, could not put a finger on what was causing my body to be in a chronically inflamed state of being, until..... One day, 6 1/2 years ago I was talking to yet another healthcare person, and for the second time within 6 months, who told me, "You really should consider getting checked for gluten I tolerance or Celiac's disease." Well...to make a long story short, I got checked out and discovered I was indeed highly gluten intolerant. But the amazing part of it all was.... I thought for a number of years that I was losing my memory, and that within 5 years (Jan 2, 2013) that I would be in a home for dementia patients because I was suffering from severe lack of memory recall, and I had no hope of getting better, as I was also having difficulty walking as well because my body was so swollen from chronic, systemic inflammation that I was having to take baby steps, like a little toddler would, and it was seriously difficult for me to even navigate the 4 steps it took to get from the parking level of our driveway, and up the 4 stairs to the front or back door. I had to take the steps one by one, where I would hang onto the rail, and put one foot up then hang on to get the other foot up to the step before going to the next step, and the next. Well low and behold, the very first day I began doing a glute free diet, I instinctively knew that something was different. I felt like the little Eyore character from Winnie the Pooh where he always had a gloomy cloud above his head wherever he went, and his thoughts were always forlorn and gloomy...which is how I felt for many years prior to the day I went gluten free. It may be hard for someone to believe this, but the very first day I went gluten free,it was as if a gray cloud was lifting from my brain, and my mind began to come clear, and just kept getting clearer and clearer as the days, weeks, and years went by. And I can honestly say today that that constant feeling of soon and gloom began to wash away, and my brain is sharper today, at age 65, than it's been my whole life long...and I know this is true because I struggle throughout all my formative years of schooling, and I used to wonder, W"CAN'T I RETAIN THE THINGS I'VE STUDIED FOR HOUR AFTER HOUR, DAY AFTER DAY!?!" Well no more brain fog for me! My thinking is clear, but sadly, the years of not knowing what the culprit was that was causing the inflammation – that being GLUTEN, did some irreparable damage to my joints, and of course my gut has struggled to heal, because the "gluten effect" begins inside the stomach, and once the stomach lining is destroyed, all manner of things will su sequently afflict the tissue throughout the body, as well as the brain tissue. It's been a long 6 years of recovery, and years of doing research regarding how gluten affects the body...as well as a relearning on what and how to cook, and eat, and shop for groceries in a whole new way...but there's no doubt in my mind whatsoever that gluten / the gluten effect, can destroy a person's body if they are truly gluten intolerant, or true Celiac's. No one can tell me this is a figment of my imagination because I've lived it for the better part of my 65 years on planet Earth. Gluten intolerance is as real as cancer, diabetes, arthritis, and the list goes on...............as to what it can adversely do to those of us who suffer from this auto immune disease.

Gluten intolerance, Wheat Allergies, and Celiac Disease are real. My children and I have been suffering from a number issue including Eosinophilic Esophagitis brought on by gluten intolerance, other food allergies, Celiac Disease. How do you explain 24/7 abdominal pain for a year to a 3yo child. According to this I should let him eat all the glutinous products and risk his life. Gluten consumption and a Silent Atipycal Celiac Disease has brought me a number of neurological issues that were unexplainable until I was diagnosed with Celiac. I have been experiencing: Sudden Temporary Hand Paralysis, sparsely; Essential Tremors; Positional Irregular Heartbeat Weakness; Ataxia; Double Vision; MS like Inability to Walk without the assistance and support of others; Psychogenic Non Epileptic Seizures; Depression. Is that enough?! This is highly irresponsible and damaging. As it is plenty of people are uneducated and even willfully ignorant on the dangers of food allergies and intolerance. Why, some flat out refuse to acknowledge these dangers and treat it not as the dangerous and serious medical condition that it is but as a stupid frivolous fad to the point where they endanger lives, verbally and emotionally abuse people, strangers, family members, their own kids and grandkids.
