Environmental management is essential to the successful operation of the hospitality businesses. This book simplifies the complex issue of environmental management for both students of hospitality and industry practitioners (such as hotel managers and restauranteurs). The study explains how global environmental problems affect the hospitality industry and vice versa. It also outlines the processes that should be followed in environmental management, and the specific environmental management practices of hospitality businesses in the areas of waste management, energy and water conservation. It provides a global perspective on the study of environmental management in the hospitality industry by drawing on success stories and previous research on the topic from across the globe.
À propos de l'auteur
Ishmael Mensah is an Associate Professor of Tourism and Hospitality Management at the University of Cape Coast, Ghana, and Ghana Director of the Confucius Institute at the same university. He holds a PhD in Tourism, and is a Certified Hospitality Educator and a Member of the Institute of Hospitality. He also holds post-graduate certificates in Hospitality Administration, as well as Event Planning and Tradeshow Management, from Georgia State University, USA. He has published over 20 articles in various renowned journals, including the International Journal of Hospitality Management and Journal of Sustainable Tourism. He is also the author of two books and three book chapters. His research interests include environmental management and service quality. He is currently the Editor-in-Chief of the African Journal of Hospitality and Tourism Management.
